  • Total Time: 1 hour
  • Yield: 4 servings 1x

Ingredients

Scale

To make this Apple Cider Pork with Mashed Sweet Potatoes, you’ll need the following ingredients:

  • 2 pounds pork tenderloin
  • 1 cup apple cider
  • 2 tablespoons Dijon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1/4 cup milk (or more for desired creaminess)
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and season the pork with salt and pepper.
  2. Mix apple cider, Dijon mustard, brown sugar, and cinnamon in a bowl for the glaze.
  3. Sear the pork in a hot skillet until golden brown on all sides.
  4. Pour the glaze over the pork and bake for 25-30 minutes until the internal temperature reaches 145°F (63°C).
  5. Boil cubed sweet potatoes in salted water until tender, about 15-20 minutes, then drain.
  6. Mash the sweet potatoes with butter and milk until smooth, seasoning with salt.
  7. Let the pork rest, then slice and serve with mashed sweet potatoes and drizzle with glaze.

Notes

  • For extra creaminess, adjust the amount of milk in the mashed sweet potatoes.
  • Allow the pork to rest before slicing to retain juices.
