- 2 cups cooked chicken, shredded or diced
- 1 large apple, diced (I love using Honeycrisp for its sweetness)
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup walnuts, chopped (or your favorite nuts)
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh greens for serving (optional)
Instructions
- Prepare all ingredients: dice the apple, chop celery and onion, and ensure chicken is cooked.
- Mix the dressing by whisking together Greek yogurt, mayonnaise, honey, and lemon juice.
- In a large bowl, combine chicken, apple, celery, red onion, and walnuts.
- Pour the dressing over the salad and gently fold to combine.
- Chill the salad in the refrigerator for 15-30 minutes before serving.
- Serve on fresh greens or in a bowl, and enjoy!

- Using leftover chicken can save time.
