Ingredients

  • 12 oz tortellini (cheese or meat-filled)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoncini, sliced
  • 1/2 cup salami, diced
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Italian dressing
  • Salt and pepper, to taste

Instructions

  1. Cook tortellini in salted boiling water according to package instructions (5-7 minutes).
  2. Drain tortellini and rinse under cold water.
  3. In a large bowl, combine cooked tortellini, cherry tomatoes, cucumber, black olives, pepperoncini, salami, mozzarella balls, and red onion.
  4. Drizzle Italian dressing over the salad and toss gently.
  5. Season with salt and pepper to taste; mix again.

Notes

  • For a vegetarian option, omit the salami.
  • This salad can be made ahead of time; just add dressing before serving.
