- 12 oz tortellini (cheese or meat-filled)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup pepperoncini, sliced
- 1/2 cup salami, diced
- 1/2 cup mozzarella balls, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup Italian dressing
- Salt and pepper, to taste
Instructions
- Cook tortellini in salted boiling water according to package instructions (5-7 minutes).
- Drain tortellini and rinse under cold water.
- In a large bowl, combine cooked tortellini, cherry tomatoes, cucumber, black olives, pepperoncini, salami, mozzarella balls, and red onion.
- Drizzle Italian dressing over the salad and toss gently.
- Season with salt and pepper to taste; mix again.
Notes
- For a vegetarian option, omit the salami.
- This salad can be made ahead of time; just add dressing before serving.
